Tea is forever inspiring, not only in pastry but cocktails too!
Celebration Medley by Sloane Tea is one of my favourites when there is a little chill in the air. A blend of apple, orange peel, spices and rose petals, it’s the perfect concert of flavours.
Yields 1 Cocktail
Mis en Place
½ Cup Water
½ Cup Apple Cider
½ Cup Sugar
2 Sachets of Celebration Medley by Sloane Tea
3 Cinnamon Sticks
2 oz Whiskey
½ oz Lemon Juice
2 Dashes of Orange Bitters
1 Egg White
In a small saucepan combine sugar with water and apple cider. Place over medium heat and bring to a boil.
Once syrup comes to a boil remove from heat and steep 2 sachets of tea with cinnamon sticks.
Chill until ready to use.
Into a cocktail shaker combine whiskey, 1 oz of simple syrup, lemon juice and 1 egg white.
Dry shake to develop good foam.
*For a vegan alternative swap egg white with aquafaba
*For a mocktail substitute whiskey with apple cider
Add ice and shake again.
Pour into a coupe glass; add 2 dashes of orange bitters and garnish with dehydrated citrus and a cinnamon stick.
