These apple cider donuts bring back the nostalgia of childhood trips to apple orchards, where the cool air was filled with the comforting scent of fresh apples and warm, sugary donuts enjoyed right on the spot.
This is a yeast donut which means they require hours of proofing time, and have a slightly chewier texture.

60 G. Unsalted Butter
250 G. Apple Cider
375 G. All Purpose Flour
25 G. Granulated Sugar
5 G. GroundCinnamon
1 G. Ground Ginger
1 G. GroundClove
1 G. Ground Nutmeg
5 G. Active Dry Yeast
2 G. Baking Soda
5 G. Salt
Coating
50 G. Granulated Sugar
50 G. Raw or Organic Granulated Sugar
5 G. Ground Cinnamon
1-2 G. Salt, to taste
1.5 L Oil to Fry
Avocado, Canola, etc.
Method
Step 1
Make Dough
In a small saucepan brown the butter.
Deglaze the pan with chilled apple cider and transfer to a spouted vessel, be sure to scrape all the yummy brown bits.
In a food processor or a stand mixer fitted with a dough hook, combine all the dry ingredients including the yeast.
Slowly pour in the butter/cider mixture and mix only until the dough comes together.
Transfer to a well greased bowl and cover with plastic wrap or a damp towel.
Let proof in a warm space for 2 hrs.
Step 2
Lightly flour work surface then the dough, roll dough into a 8x12 rectangle, roughly 1/2" thick.
*Try to avoid pushing the gases out of the dough.
Use round cookie cutter to punch out 6 rounds, and then cut out a smaller hole in each one to create a donut shape.
Lay the cut donuts onto a lightly floured pan.
Press scrap dough back together into rectangle and cut out a few more donuts.
Cover the pan with a damp towel and let proof again for 1 hour.
Step 3
Prepare frying station by filling a deep pan or Dutch oven with a high smoke point oil like avocado oil.
Heat oil to 350 degrees and gently lay the donuts, 2-3 at a time in the pan.
Fry each donut for 60 seconds per side.
*Be sure to take the temperature of the oil after the first round to ensure it has not risen.
Lower heat if so and wait until the oil comes down in temperature again.
Drain on to paper towels.
While hot toss the donuts in cinnamon sugar coating.
Enjoy warm or at room temperature.
