Inspired by a drink I had during a golden sunset at Eden Roc in Antibes. I’ve reimagined it with a mix of summer gin, fresh lemon juice, muddled basil and a soft orange blossom foam—floral, herbal, and just the right amount of indulgent. It’s the kind of cocktail that feels like a gentle escape, evoking slow evenings, warm breezes, and that irresistible Riviera glow.

Yield: 1 Cocktail
Mis en Place
2 Oz. Gin, Citadelle Jardin D'été
1 Oz. Lemon Juice, freshly squeezed
8-10 Basil Leaves
Thyme Simple Syrup
1 C. Granulated Sugar
1 C. Water
5-6 Stems of Fresh Thyme
Orange Blossom Foam
1 Egg White
1 Tsp. Orange Blossom Water
1/2 Oz. Thyme Simple Syrup
Basil Leaves, for garnish
*edible flowers or orange zest twist would be lovely too
Method
Step 1
Make simple syrup
In a medium saucepan, combine sugar, water and thyme.
Bring to a rolling simmer over medium-high heat and boil until the sugar has completely dissolved.
Remove from heat and set aside to cool for at least 30 minutes.
Once cool, strain syrup into a large measuring cup, through a fine mesh strainer.
Discard thyme stems.
Set syrup aside until needed.
Step 2
In a cocktail shaker, muddle basil leaves.
Add gin and lemon juice.
Set aside.
Step 3
Make orange blossom foam
In a small bowl combine egg white, simple syrup and orange blossom water.
Using a handheld milk frother to whip the mixture until it’s creamy, thick and glossy, like meringue.
Set aside.
Step 4
Add ice to cocktail shaker and shake the mixture vigorously.
Strain into a coupe style glass.
Carefully spoon or pour the foam on top of your drink.
Garnish with micro basil leaves.
