Tres Leches

This classic Latin American dessert is a true celebration of sweet, creamy goodness.

Made with a light and airy sponge cake soaked in a luscious mixture of three kinds of milk, each bite is incredibly moist and rich. Topped with a fluffy layer of Chantilly cream & strawberries is just the way we like it!

Mis en Place


Cake

1 1/2 C. All Purpose Flour

2 Tsp. Baking Powder

3/4 Tsp. Salt

3 Eggs, room temperature 

3/4 C. Granulated Sugar 

1 Tbsp. Vanilla Extract

1/2 cup Whole Milk 

1 1/4 cups Heavy Cream

1-12 Oz. Can Evaporated Milk 

  1. 1- 14 Oz. Can Sweetened Condensed Milk 

1 Vanilla Bean Pod, beans scraped from inside


Chantilly Cream

1 1/2 C. Heavy Cream, Cold

1/4 C. confectioners' Sugar

1 Tsp. Vanilla Extract

1/2 Tsp. Cinnamon, ground


1 Tray of Strawberries, quartered

 

Method


Step 1

Bake Cake

Preheat the oven to 350 degrees F.

Butter a 9X13" baking pan.


Step 2

Sift the flour, baking powder, and salt into a small bowl and set aside.


Step 3

Place the eggs and the vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium-high speed, gradually adding the granulated sugar.

Roughly for 10 minutes until light yellow and fluffy.

Reduce the speed to low and slowly add half the flour mixture, then alternate with the milk and finally the remaining flour mixture.


Step 4

Pour the batter into the prepared pan, smooth the top, and bake until the cake springs back when touched lightly and a toothpick comes out clean.

Set aside to cool in the pan.


Step 5

Prepare the Leches

In a measuring cup fitted with a spout whisk together the heavy cream, evaporated milk, sweetened condensed milk, and vanilla seeds.

Using a bamboo skewer, poke holes all over the cooled cake and slowly pour the cream mixture over the cake, allowing it to be absorbed completely before continuing to pour on more of the mixture.

Cover the cake with plastic wrap and refrigerate for 12 to 24 hrs.


Step 6

Chantilly Cream

Place the cream, confectioners' sugar, vanilla and ground cinnamon in the bowl of an electric mixer fitted with the whisk attachment. Beat on high speed, until it forms soft peaks.


Step 7

Serve

Toss quartered strawberries with a tablespoons of granulated sugar if berries are not the sweetest.

Cut square slices and place on dessert plates.

Pipe or top slices with Chantilly cream and surround and top the cake with strawberries.
